Chicken & Dumplings

It snowed, again, here yesterday.  As I am writing this, it is still snowing and is supposed to until about 3am.  Ugghh!  I am so sick of the cold and the snow!  I am not a winter girl.  I love all other seasons, but winter, winter is not my friend.

However, I do happen to love a nice warm and hearty meal on a snowy night.

I realize that a chicken and dumpling recipe is pretty common, but I just couldn't help sharing this with you all.  It is a very simple recipe with tons of taste.  If you are looking for a way to spice up your personal recipe or you are in need of a simple chicken and dumpling recipe because, lets face it, those from-scratch dumplings can be intimidating, this is a great one for you, too!

I originally mentioned this recipe in My Top 10 Slow Cooker Recipes post.  Since September, I have been fine-tuning this recipe in hopes to one day get it on the blog.  That day has come!  I didn't tweak the original recipe much, but I did substitute something and add a couple of ingredients.

Chicken & Dumplings

Ingredients
3-4 boneless chicken breasts
2 cans Cream of Chicken soup
2 tbsp. butter
Minced Onions
Salt
Pepper
Water
1 can of biscuits
Flour

Directions
Grease your slow cooker and place the chicken breasts in the bottom.  Salt and pepper the chicken to your liking. Cover the chicken with the soup, butter, and  3-5 generous shakes of minced onion.  Cover everything with water.  Set crock pot on high, cover, and let it go for 5-6* hours.

A half an hour before serving, take your biscuits and break them into pieces of four.  Pour some flour in a bowl, coat the biscuits with flour, and place them in the slower cooker.  Add more salt and pepper at this point.  Re-cover and cook for another 30 minutes, stirring once.

At the end of 30 minutes, serve and eat to your hearts content!

*This time may vary.  I cooked mine for 5 hours before putting the biscuits in, getting a full cooking time of 5 1/2 hours.  I have a crock pot that is a year old, so it still cooks fairly quickly.

Baked Sweet & Sour Chicken

Who loves Chinese? We order in Chinese at least twice a month because it's just... omgsogood!  (Well, and not to mention that the only two things that deliver in our area are pizza chains and Chinese.) So, anyway, my point is that it can get expensive.  I did some rummaging around on Pinterest (more like hours upon hours of searching) and found this super awesome recipe and wanted to give it a shot.

This stuff is awesome!  The flavor is really great and I chose to serve it with white rice (for health and time reasons), but the original recipe was made with fried rice. I know it was great with white rice, so if you make it with the fried, let me know!

Before I give you the recipe and the directions, I want to warn you that this recipe takes quite a bit of time to make.  It takes at least a half an hour to do the prep and then an hour of bake time.  So, if you are like me and have children that will do this:  "OMG! IT IS SIX O' CLOCK AND DINNER IS NOT ON MY LITTLE PINK TABLE WITH MY HELLO KITTY SIPPY!  MY WORLD HAS ENDED!" ,then you need to start making dinner at 4:30.  If you don't have this problem...can I come eat dinner with you?

Baked Sweet & Sour Chicken

Ingredients:
Chicken Coating
3-4 boneless chicken breasts
salt & pepper
1 cup of cornstarch (in a bowl)
2 eggs, beaten (in a bowl)
1/4 cup of canola oil

Sweet & Sour Sauce
3/4 cup of sugar
4 tbs ketchup
1/2 cup distilled white vinegar
1 tbs soy sauce
1 tsp garlic salt

Directions:
*Preheat oven to 325 degrees.
*Rinse your chicken breasts in water and cut them into cubes.  Salt and pepper the cubes to taste.  Dip your chicken into the cornstarch to coat the chicken and then dip into the egg mixture. (Side note:  This is such a messy process.  Take your rings off and, honestly, use thin plastic gloves.  Otherwise, you will have to keep rinsing your hands off every 2-3 mins because the coating will become so thick on your fingers you won't be able to grab anything! Ha!)
*Heat up your 1/4 cup of canola oil in a skillet so you can brown the chicken (not cooked through) before placing in the oven.
*Place all browned chicken into a greased 13X9 baking dish.
*Mix up the Sweet & Sour Sauce ingredients (see above) in a bowl with a whisk and pour evenly over the chicken.
*Pop that dish in the oven and bake for an hour, turning the chicken every 15 minutes.

As I said above, you can serve this with plain 'ole white rice or you can use the fried rice recipe that is with the original recipe above.

Thanks for stopping by again to see what this weeks recipe was!  Come back tomorrow for my newest style post!

Turkey Salsa Burgers

How's everybody doing today?  We have been staying home a lot here lately due to the cold and snowy weather that we keep getting.  I've kept myself busy purging, organizing, and cleaning all kinds of things.  I am determined to get some order going on in this house.

I've also had time to go through some of my recipes and pick some different things to show you all on the blog.  Casseroles do tend to get old, am I right?

How about a healthy burger today?

Yep.

I used 'healthy' and 'burger' in the same sentence.
Trust me.
You'll love these.

I found and pinned this recipe months ago from SparkPeople and had only tried it once before making it last week.  The first time I made this recipe, I used the frying pan method in the directions.  This time I used my Foreman gill** and it worked much better for me.  I don't like the idea of popping grease with a kiddo running around, but that's just me.

Turkey Salsa Burger

Ingredients:
1 lb. lean ground turkey
2/3 cup seasoned bread crumbs (I used Italian)
4 tbsp. chunky salsa (I used Mild)

Directions:
Combine all ingredients in a bowl and salt and pepper to taste.
Divide into four patties.
Spray a frying pan down with cooking spray and cook over medium heat until thoroughly cooked; flipping once about half way through, about ten minutes.

**When using the George Foreman grill, I sprayed the grill down with cooking spray and cooked two at a time for the same length of time, flipping at the five minute mark.  Grill times may vary.  Mine is older than Moses.

I served these on regular hamburger buns because I didn't get to the bakery section in time to get the "good stuff".  :( I always try to serve whole wheat or whole grain when I make things that require a bun.  It just tastes better to me and it's healthier.

I also served these with a pasta salad, making me feel like we were already in spring, and thus making me feel better about the weather for the duration of the evening.  Then, it snowed. Again.

I think these would be great with avocado or pico de gallo on top.  Even your traditional lettuce and tomato would be great. I ate mine with a smattering of ketchup and mustard.  The hubby ate his with ranch because I was out of mayo by the time I finished the pasta salad.  Oops! He said the ranch was good though!

What are some of your favorite ground turkey recipes?

Taco Shells & Cheese

AND WE'RE BACK!  I took quite a break from the 'ole blog over the holiday season and I am trying to get back into the swing of things.  I'm still working on blowing the dust out of my brain, so bear with me the next couple of weeks while we got a routine restored around here.

With that being said, I have a new recipe for you all today!  It was supposed to be my Chocolate Chip Cookie Dip that I made over the holidays, but my pictures disappeared, so I will have to re-make that one and take different photos. :(

So, today, is a very simple recipe....a college kid recipe, if you will.  My mother-in-law told me about this years ago when E and I were living together, stating that she used to make it for E when he was little.  We ate the crap out of it back in the day! I hadn't made it in a while, but those days between Christmas and New Year's were tough, so I made this and L loved it, too!

This recipe is simple, easy, and yummy!  You only need about 4-5 ingredients and it's quick.  This is perfect for nights that you don't have a lot of time or it's time to go to the store and you just don't want to go quite yet because, hey, the milk is still good and so is the bread and you have these ingredients that you know you can make something out of....Oh...am I the only one that does that?  ...Oopsie... :)

You will need:
1 lb. ground beef
1 packet of taco seasoning
1 box of shells and cheese of your choosing
Salsa
Mexican/Fiesta Blend Shredded Cheese (optional)

Directions:
***NOTE:  Prepare your shells n cheese in a larger than normal pot!  You will be mixing everything in with the shells and cheese.

Prepare the shells and cheese like you normally would.  While the shells are boiling, prepare the ground beef by following the directions on the taco seasoning packet.

Once your shells and cheese and the ground beef are ready to go, dump the meat into the pot with the shells and cheese, mix it together.

Now, add and stir in the salsa.  I always use a mild/medium salsa and I start with a cup.  If I think it needs more, I add to taste.  (I kept it pretty light this time since I was feeding it to the kiddo.)

Make sure it's mixed well, serve in bowls, and top with shredded cheese!  You could even add a dollop of sour cream if you would like!

Now, how's that for an easy and yummy dinner?

Cheesy Tuna Casserole

Welcome everyone!  It's Wednesday and that usually means that it's time for another recipe from yours truly! :)  This week I have a super easy casserole to share with all of you.  We will get to that in a minute, but first I need to cover a couple of things:

1.  This will be the last recipe for 2013.  I won't be posting recipes until after the first of the year.  I'm giving myself a break for the holiday season and to replenish my recipe stash. ;)

2.  I have quite a bit of end-of-the-year things to wrap up that are blog related.  I have posts planned until January 1st, so I need to get to cracking on new material!  Is there anything you would like to see on the blog?  Leave me a comment and tell me!

Now that business is taking care of, let's get to talking about the subject at hand....

This recipe came about after rummaging through my pantry in hopes of finding something to fix for dinner.  It was cold and snowy and I didn't want to venture out to the store.  After doing some quick Google searches and pantry rummaging, I discovered I had everything I would need to make some Cheesy Tuna Casserole!

Ingredients:
1 can of tuna in water, drained
Egg Noodles (I used half of a one pound bag.  It fed three people and we had leftovers for two small portions)
1 can Cream of Celery (You can also use mushroom, but I was out.)
1 can of milk (use the soup can)
1 package of shredded cheddar cheese
Bread Crumbs (I used Panko Bread Crumbs..not my first choice, but it's all I had)
***You may also add veggies***

1.  Bring noodles to a boil before you start the next step.
2.  To prepare the soup and cheese mixture, heat the soup and one can of milk in a separate pan until smooth.  Flake in tuna.
3.  Turn the soup and tuna mixture down on low, preheat your oven to 350, and grease a 9x13 baking dish.
4.  By now, your noodles are probably ready.  I shut the burner off and let them sit in their water while I did the next step.
5.  Add the shredded cheese to your soup mixture and stir until melted.  (I started with a half a bag and that was plenty.)
6.  Drain your noodles, dump them back into the pot they came out of , and then add the soup and cheese mixture.  Stir until well blended.
7.  Transfer to the baking dish, top with bread crumbs, and extra shredded cheese if you so desire.
8. Bake at 350 for 15 minutes.  Let stand 5 minutes before serving.

I was worried about how this would turn out because I did it on the fly, mostly.  I read a few tuna casserole recipes from Google before I started, but that was all the knowledge I had.  I thought it turned out pretty good!  Even the hubbs and the kiddo enjoyed it!

I have discovered that the more I have been cooking from scratch, the better my brain is getting at recalling what goes best with what, cook times, etc.  It's pretty exciting, but really strange at the same time.  I always had to follow recipes.  I was always scared to deviate or try to do something from memory, but I am finding that I am starting to want to venture away from that safe space.

I believe this series has a lot to do with that, so thank you guys for being so supportive!  It means so very much to me!

Holiday Treats Round Up

I don't know about all of you, but one of my favorite things about this time of year is the treats.  The cookies, the cakes, the brownies, the Hershey Kisses....(um, actually, that last one is all year...).

Anyway, I have started making my way through Pinterest and trying to decide what I want to make this year.  I don't go crazy because it's just the three of us, but I love to bake.  The Hubbs loves cookies, so I usually do a cookie or two, but I always try and find something different to do.  Then you have the holiday parties to bake for, too and it can get a bit overwhelming, right?

Well, fear not!  I have come up with a little round up for you all of some of the most delicious looking holiday treats I have seen.

What are some of your favorite treats to make this time of year?

Cheesy Chicken Noodle Casserole

It has just gotten down right frigid here in the Midwest this week.  I was looking for an easy meal to prepare since I am saving all of my energy for my big turkey preparing debut on Thursday.  I also wanted something warm and comforting since it was so darn cold outside!

Cheesy Chicken Noodle Casserole

Ya'll, this is so good!  My husband was all about it, my kid was all about it, and I enjoyed eating my portion of it too!  We even have leftovers!

This has minimal ingredients, about a half an hour prep time, and about a 35 minute bake time.  So, in a little over an hour, you can produce this meal for your family.

The following recipe states that it serves 8, however, we are a family of three and we probably have enough left for two of us to eat it. We kinda like big portions sometimes.... :)

Ingredients:
2 cups of Egg Noodles
2 cans Cream of Chicken Soup
3 cups, divided Shredded Cheddar Cheese
1 cup of Milk
1 Can of Cooked Chicken
Salt and Pepper (to taste)
1/4 cup of Ritz Cracker Toppings

Directions:
Preheat oven to 350
Start your water for your noodles.  Once water comes to a boil, dump in your 2 cups of noodles.  Cook per package directions.
Get out a big skillet and dump in your 2 cans of soup and 2 cups of the shredded cheese.  Set to med-high heat and slowly stir in the milk.  Continue heating and stirring frequently until cheese melts.
Drain your cooked chicken and toss that into the soupy cheese mixture. Add your noodles once those are done.
Stir it all together and prepare to dump all of that into a 2 1/2qt casserole dish where you will then sprinkle the top with the crumbled up Ritz crackers.
Place in oven and bake for 30 minutes.
At the end of bake time, sprinkle the top generously with the remaining shredded cheese (or more) and bake for another five minutes.

It comes out looking like this:

I highly recommend this recipe!  It was pretty easy to do and it was a really comforting meal that my family enjoyed.

And after all the leftovers have been put away tomorrow and you are checking the days events, come on back for my Thanksgiving Day version of Operation: Get Out of Yoga Pants!

See ya then!

Thanksgiving Dessert Round Up

Alright, so, here's the deal:  I flaked on a recipe for this week.  I totally forgot to include my featured recipe in my grocery list and thus, it did not get purchased.  Next week though, I will have an awesome new recipe to make up for it!

In the meantime, I took the liberty of rounding up some pretty yummy looking Thanksgiving desserts around Pinterest!  Have a look see!  You won't find pumpkin pie in this round up!

What's for dessert at your house on Thanksgiving?

Pigs in a Blanket

Here I am again with another recipe from my kitchen!  This one is good for the kiddos and adults!  Because, seriously, who doesn't like little hot dogs wrapped in melted cheese and a lovely croissant?

I made these for L and I one day for a fun lunch.  In need of a change from our lunch meat/PBJ/Chicken Fingers rut, I started scouring the fridge.

Hmm...Turkey dogs....sliced cheese....a can of croissants...PIGS IN A BLANKET!

I quickly got to work creating the coolest pigs in a blanket I had ever created.

Here's what you will need:
4 hot dogs
4 slices of American cheese
A can of croissants
(This recipe makes 8.  Adjust for your needs.)

Here's what you need to do:
***Follow the directions on the croissant can for pre-heating and cooking times.***
Spray your cookie sheet with a good non-stick spray.
Cut the hot dogs and the cheese slices in half.
Un-roll the croissants so they make their cute little triangles and place them directly on the cookie sheet (or a cutting board, counter top, etc.)
Place a piece of cheese down on the little triangle, then the hot dog, and roll 'em up!
Continue this until they are all rolled and bake as directed.

Let them cool down and serve!

Toddler approved!

From My Kitchen: Pumpkin Bread

Just because October is over, doesn't mean that you have to stop talking about pumpkin.  We love pumpkin in this house!  Today's recipe I made a couple of weeks ago and it was gone before I had a chance to do anything about it.

The Hubbs mentioned a couple of times how he was in the mood for pumpkin bread and, after the second time, I thought, "I better make him some pumpkin bread," and set out to find a good recipe.

I went through every recipe I had here in the house before getting on Pinterest.  What I had wasn't giving me the "warm fuzzies" so I set out on Pinterest to find the perfect pumpkin bread recipe.

I wanted something that would embrace the season with its look, smell, and taste.  I scoured tons of pins before finding this recipe from Leah over at Freutcake.  Score!

Guys....
This pumpkin bread is perfect.

It smells of fall and it tastes like a walk through lush fallen leaves.

You  have to make this.

This girl knew what she was doing when she whipped this up in her kitchen.

The Best Pumpkin Bread

Ingredients:
1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup granulated sugar
2 large eggs
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup pumpkin puree
1/2 cup sour cream
1 teaspoon vanilla
1 tsp cinnamon
1/2 tsp nutmeg

Directions:
1. Preheat oven to 350 degrees. Spray down your loaf pan with some good non-stick spray.  I use Canola Oil.
2. In an electric mixer with a paddle attachment (or using your hand mixer, like I did, on the lowest setting possible) cream butter and sugar until light and fluffy.
3. Add eggs, and beat to incorporate.
4. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg and salt. Add to the butter mixture, and mix until just combined.
5. Add pumpkin, sour cream, and vanilla; mix to combine.
6. Pour batter into prepared pan and bake 50 minutes or until a cake tester inserted into the center of the cake comes out clean. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

Please don't judge me by my deformed loaf.  :(

Doesn't that look great?
Well, despite how oddly shaped it is on top....

.......

I learned something new with this recipe.  See how my loaf is all weird looking on top?  My oven is too hot. I found this out after sending a picture to my mom and asking her why my loaves always come out weird. That's when she proceeded to tell me, according to Dad, that my stove is too hot and it's probably because it's gas.

So, if you have loaves that come out that way: get yourself an oven thermometer, pop that baby in, and find out what the TRUE temperature of your stove is.

Mine is 10 degrees too hot, so I should have baked this pumpkin bread at 340 for 50 minutes, instead of what the recipe stated.  Good to know for future reference!

So, tell me, what's your perfect pumpkin bread recipe?

Honey BBQ Chicken Sandwiches

Welcome to the first post in the From My Kitchen series!  I am excited to share today's recipe with you and hope that you will come back week after week to see what else I have been cooking in my kitchen.

The purpose of this series is to help me broaden my horizons in the kitchen.  I fell into a huge rut cooking this past year and I have to get out of it.  I enjoy cooking (and baking), but I had lost interest.  I had lost interest to the point where I was mainly just fixing the same things over and over again throughout the month.

My poor family....
...And my hips.

I am holding myself accountable to all of you.  Once a week, there will be a new recipe posted.  It may not always be a dinner item.  It may be a dessert or a quick lunch idea.  Either way, it is something that I have made in my kitchen not from a box!  (I told you it got bad!)

This definitely did not come from a box....

Would you look at that?
Oh so good!

I have a huge amount of recipes saved on Pinterest.  This particular recipe came off of my slow cooker recipes board and is brought to you by Liz from Love Grows Wild.  I made this earlier last week on a particularly dreary day here in the Midwest.  I wanted something comforting, yet simple, and this dish provided just that.

Honey BBQ Chicken Sandwiches

Here is what you will need:

Ingredients
3-4 boneless skinless chicken breasts
1 18 oz bottle of honey BBQ sauce
1/2 cup of Italian Dressing
1/4 cup of brown sugar
2 tablespoons of Worcestershire sauce
Kaiser rolls

Get out your slow cooker and place the chicken breasts in the bottom.  I used 4 decent sized chicken breasts and we had enough left over for another dinner.  No joke.  This would probably freeze great too!

In a bowl, mix together your BBQ sauce, Italian dressing, brown sugar, and Worcestershire sauce.  Make sure you get it nice and blended!  Smell that?  Yea....just wait...your whole house is going to smell like it soon...

Pour all of that sauce over your chicken

Like this:

Now, plop the lid on the cooker and set it and forget it!

If you a crunched for time, you can set it on HIGH for 3-4 hours.
Got a little time?  Set that baby on LOW and let it go for 6-8 hours.
I cooked ours for a total of six and a half hours and it was just fine.

About 30 minutes before you are ready to eat, shred the chicken.  Mine was so ready I was able to just break it apart with a cooking spoon while still in the cooker.  You can also take it out and shred it with two forks, whichever you desire.

Let the chicken cook for another 30 minutes so it gets all nice and saucy.

Spoon the chicken onto some Kaiser rolls and voila!
You have yourself a warm and simple meal.

What I like about this is that it can be used in the warmer months and the colder months.  Can you imagine eating this at a Fourth of July picnic with some potato salad?  Mmm, yummy!

What have you all been cooking up lately?

Spaghetti Sauce

While making dinner last night, I reached into the refrigerator  for the spaghetti sauce, (I know, my bad.  Scratch is better.) opened the lid, and was met with mold on the inside of the cap!  WHAT!?  I checked the expiration date-still good. I promptly tossed the jar into the trash can and went downstairs to see if I had any spaghetti sauce in my (small) stash.

There wasn't any sauce.

Crap.

.....

I sent a shout out on Facebook seeing if anyone had a quick and easy spaghetti sauce recipe they could give me and started frantically searching for my Mom's sauce recipe in my (totally unorganized) recipe basket.

No dice.

Craaaaap.

My aunt text me a link to a Pinterest pin and it seemed easy enough except....

I didn't have all the ingredients it called for.

Craaaaaaaaap.

So, in my Aries way, (I work best under pressure) I began searching up recipes on the iPad, seeing what all the recipes in the internet world had in common.

(Mind you, my child is running around like a heathen, screaming and throwing things.  Daddy is downstairs working in his office.  The cats are running a muck and Mommy is having a panic attack.  Welcome to my life at dinner time.)

My trusty iPad informed me that spaghetti sauce had these things in common:

Garlic
Sugar
Black Pepper
Basil
Oregano

Tomato Paste
Diced Tomatoes
Tomato Sauce

Cool!  I have all of those ingredients!

Uh...no I don't.

Craaaaaaaaaaaaaaaaaaaaaaaaaaaaaap!

I had everything but the garlic, basil, oregano, and tomato paste.

So, I began rummaging around my spice cabinet again and came up with garlic powder and Italian seasoning.

BINGO!!!

I started throwing ingredients in my skillet with the meat already browned, stirred it around really good, and let it simmer, while covered, for a good fifteen minutes.

Result:  It was a little watery (needed the tomato paste), but it was really good! It had a sweet taste to it (sugar) which also killed the acid that would have been found in the diced tomato and the tomato sauce.

I was very proud of myself in the kitchen last night.  I actually used my resources (and my brain) and was able to produce a spaghetti sauce on the fly.

Go me! :)

Please pin this image.

Ingredients:
1 can of diced tomatoes
1 can of tomato sauce
1 can of tomato paste
2 tbsp. of sugar
1/2 tsp. of black pepper
Garlic powder
Italian seasoning

Add all above ingredients into your skillet with your browned (and drained) meat.  When you get to the garlic powder and Italian seasoning, these are to taste.  We like garlic around here, but not overpowering amounts.  I did 3-4 shakes over the entire skillet of both seasonings and it turned out just fine.

Mix everything up in your skillet, set your stove to simmer, and cover for about 15 minutes.

Do a taste test before you serve.  If it needs more of something, add it now.

Voila!

On-The-Fly Spaghetti Sauce!

So, tell me:
What's your go-to spaghetti sauce recipe?
